Sorry I have been so inactive this week! It's been so crazy around here and I haven't had time for much! For those of you don't know, I founded a camp in 2014 called Celiac Strong Summer Camp (www.celiacstrongcamp.org). This is a camp for kids 7-16 with celiac disease or gluten intolerance just a few hours outside of Rochester, NY. Well, this Sunday marks the beginning of year three! I am beyond proud of this camp and everyone that is apart of it. It is a big part of who I am today; these kids have changed my life. This week has been full on camp mode! Receiving donations, making phone calls to demonstrators, volunteers, and food companies, running errands, finalizing the schedule, etc., etc. This, plus a full time job, would be why I have been away for a week! I'm so sorry, I'll be back and running Thursday. Anyways, I'd like to talk to you about camp. I created this camp as a place for kids to be kids for a few days and forget about their disease. The food is all 100% gluten free, and no one has to think twice about what they're eating. That is the magic of the camp! Everyone has one thing in common, a common enemy if you will, gluten. Its a stress free couple of nights, and as short of a time as it is, these kids really look forward to it. If you have any questions, please feel free to visit the website or email me!
